Cucumbers
On occasion, my favorite sandwich is an egg sandwich with lettuce, tomato, and onion. The bread must be lightly toasted with mustard on one side and mayonnaise on the other. Please slice the bread in half. There are times when I desire to add a couple of slices of avocado or substitute the avocado for the egg. Um, um, good and filling!
Choosing the Bread
To create a good vegetable sandwich, start by selecting a hearty bread that can hold up to the moisture of the vegetables. Options include whole wheat, sourdough, ciabatta, or focaccia. These types of bread provide a solid base and add flavor to your sandwich.
Selecting Spreads
Choose a spread to add moisture and flavor. Some popular options are:
• Hummus
• Avocado spread
• Cream cheese (or a flavored cream cheese)
• Pesto
• Mayonnaise or vegan mayo
These spreads not only enhance taste but also contribute healthy fats.
Adding Cheese (Optional)
If you want to include cheese for added richness, consider using:
• Feta
• Goat cheese
• Havarti
• Swiss cheese
• Vegan Cheese (Viola life is my favorite)
Cheese can complement the flavors of the vegetables while adding protein.
Piling on the Vegetables
The key to a satisfying vegetable sandwich is in the variety and freshness of the vegetables. Here are some great choices:
• Leafy greens (spinach, arugula, or lettuce)
• Sliced tomatoes (preferably heirloom for better flavor)
• Cucumbers (thinly sliced)
• Bell peppers (sliced or roasted)
• Red onions (thinly sliced)
• Avocado slices
• Shredded carrots
• Sprouts (like alfalfa or broccoli sprouts)
Layer these ingredients generously for texture and flavor.
Seasoning and Extras
To elevate your sandwich further, consider adding seasonings or extras such as:
• Salt and pepper to taste
• Pickled onions for tanginess
• Fresh herbs like basil or cilantro for brightness
• A drizzle of balsamic vinegar or olive oil for added depth.
Enjoy Your Sandwich
Cut your sandwich in half if desired and serve it immediately for the best texture and flavor experience. Pair it with a side salad or some fresh fruit for a complete meal.
